A taste of Nor-Fishing

Norwegian seafood is valued worldwide for its good quality. At this year’s exhibition there is an abundance of delicious morsels—and we have tested some of the delicacies.

Several exhibitors and pavilions are serving delicious tastings at their stand, with local ingredients from their regions.

Flavors from the north

At the pavilion of Nordland County Municipality, you can taste, among other things, smoked whale with beetroot hummus, bok nafish with tomato salsa and smoked trout with herb cream cheese.

The county municipality has had the same chef at the fair for many years.

The tastings are always popular and attract a lot of people. This year, the ingredients have been prepared with, among other things, Asian and Mediterranean-inspired flavors, which has gone down very well,” says the nice lady on the stand, Anna.

Vestland County Municipality has students from Måløy upper secondary school with them who are responsible for the cooking ring on the stand this year. The fish they use in their dishes is caught by fellow students on the school boat Skulebas.

Here we prepare and serve food to everyone who has a stand under Vestland County Municipality’s pavilion. In addition, we prepare tastings for visitors every day throughout the exhibition,” says student Dina.

Dina shows off one of the temptations; his homemade “brandadkule” of white fish, venison sausage, smoked cod, fish cakes and confectionery cake.

A gastronomic delight

At the pavilion of Møre and Romsdal County Council, you will find Ole serving up delicious tastings. He usually works as head chef at Atlanterhavsparken in Ålesund, and this is his seventh time at the exhibition. He has his colleague Maria and apprentice Lukas with him.

Here we have whale meat from Myklebust on Harøy, green pepper sauce with cognac and a bit of cabbage,” says Ole, showing a tray of samples.

Danded nicely on the side, we find rockfish with potato cream and tomato, and Juvik herring with cucumber, sour cream and rye bread. A delight for both eyes and palate.
